
Apple Cake with Maple Frosting

Preheat oven to 160°C. Grease and line a 9" cake tin.

Using a paddle mixer, beat the olive oil and caster sugar together.

Mix in the vanilla extract.

Add the 3 whole eggs and 2 yolks one at a time into the oil mixture, mixing well.

In a separate bowl, whisk the 3 egg whites to soft peaks and set aside.

Fold the lemon zest and peeled, chopped cooking apples into the main mixture.

Sift in the plain flour, salt, cinnamon, baking powder and bicarbonate of soda. Fold into the wet mixture until just combined.

Gently fold in the whisked egg whites.

Pour into the prepared tin and bake at 160°C for 1 hour 30 minutes until a skewer comes out clean.

Leave to cool completely, then slice horizontally to split the cake in half.

Make the maple frosting: cream the soft butter and soft brown sugar together until fluffy.

Add the maple syrup and mix into the buttercream.

Add the mascarpone and mix together until smooth.

Spread frosting generously over the middle layer and on top of the cake.
