Banana & Pecan Bread

A dairy-free banana bread loaded with ripe bananas, crushed pecans and dairy-free yoghurt for extra moistness. Makes 2 loaves. Can be made gluten free.

👩‍🍳 Method

    Preheat oven to 170°C. Grease and line 2 loaf tins.

    Mash the bananas and mix with the melted dairy-free butter.

  3. 3

    Add the light brown sugar, salt and dairy-free yoghurt. Mix to combine.

    Mix in the sifted self raising flour, bicarbonate of soda and crushed pecans until just combined.

    Divide between the two prepared loaf tins and bake for 1 hour until a skewer comes out clean.
