Chocolate Fudge Cake

A deep, moist chocolate fudge cake made with sour cream, buttermilk and cold water for an incredibly tender crumb. Bakes in two 20cm round tins.

Preheat oven to 160°C. Grease and line two 20cm round cake tins.

Mix together the plain flour, both sugars, cocoa powder, baking powder, bicarbonate of soda and salt in a large bowl.

In a separate bowl, mix the eggs, sour cream and vanilla extract together.

Add the melted butter and corn oil into the egg mixture.

Pour the wet ingredients into the dry and mix well. Add the cold water and stir until smooth.

Divide between the two prepared tins and bake for 50–55 minutes until a skewer comes out clean.

Cool completely before icing with your choice of chocolate ganache or buttercream.
