Coffee Cake

A classic coffee sponge made with cold black coffee in the batter, topped with a rich coffee butter icing and walnut decoration.

👩‍🍳 Method

    Preheat oven to 150°C. Grease and line a tray or two cake tins.

    Cream the butter and caster sugar together until light and fluffy.

  3. 3

    Add the eggs one at a time, mixing well between each addition.

    Stir in the cold black coffee.

    Sift in the self raising flour and baking powder. Fold into the mixture.

    Pour into the prepared tin(s) and bake for 30 minutes until a skewer comes out clean.

    Make the coffee icing: beat the icing sugar and butter together, then add the hot black coffee and mix until smooth.

    Spread the icing over the cooled cake and decorate with walnuts.
