A fragrant, buttery elderflower and lemon cake, soaked with lemon juice and elderflower cordial while warm, then finished with a cream cheese frosting.
👩🍳 Method

Preheat oven to 140°C. Grease and line your cake tin(s).

Whisk the eggs, yoghurt and milk together and set aside.

Beat the butter and golden caster sugar together until light and fluffy.

Mix the self raising flour into the butter mixture alternating with the egg mixture until combined.

Stir in the lemon zest and a drop of elderflower cordial.

Bake for 40 minutes until a skewer comes out clean.

While the cake is still warm, mix the lemon juice and 3 tbsp elderflower cordial together and spoon over the warm cake to soak in.
