
Granny Smith Apple Cake with Maple Icing

Preheat oven to 170°C. Grease and line a 9" cake tin.

Mix the olive oil and caster sugar together in a mixer.

Add the vanilla extract, then the 3 whole eggs and 2 yolks one at a time, mixing well.

Stir in the lemon zest and chopped Granny Smith apples.

Sift together the plain flour, cinnamon, salt, baking powder and bicarbonate of soda. Fold into the mixture.

In a separate bowl, whisk the 3 egg whites to stiff peaks, then stir into the batter.

Pour into the prepared tin and bake at 170°C for 1 hour 30 minutes until a skewer comes out clean.

Make the maple icing: beat the butter and muscovado sugar together until fluffy. Add the maple syrup and mix in. Add the cream cheese and whisk everything together until smooth.

Once cool, spread the maple icing over the top and sides of the cake.
