Hazelnut & Brazil Nut Blondies (Gluten Free)

Rich, fudgy gluten-free blondies made with browned butter, coffee, white chocolate and Brazil nuts. Makes 2 trays. Cover with foil halfway through baking to keep them moist.

    Preheat oven to 180°C. Grease and line 2 brownie trays.

    Brown the butter in a saucepan until it turns golden and smells nutty. Remove from heat and stir in the dissolved coffee mixture.

    In a large bowl, combine the gluten-free flour, xanthan gum, baking powder and ground almonds.

    In the saucepan, melt the light brown sugar and demerara sugar into the browned butter over low heat until dissolved.

    Add the eggs and vanilla extract to the butter and sugar mixture and beat well.

    Combine the dry flour mix with the butter mixture and stir together.

    Fold in the chopped white chocolate and Brazil nuts.

    Divide between the two prepared trays. Bake at 180°C for 70 minutes, covering with foil after the first 30 minutes to prevent over-browning.

    Leave to cool completely in the tins before cutting.
