Lemon Cake

A classic, buttery lemon sponge with generous lemon zest, finished with a lemon mascarpone icing and lemon glaze.

👩‍🍳 Method

    Preheat oven to 150°C. Grease and line your cake tin.

    Cream the butter and caster sugar together until light and fluffy.

    Add the eggs slowly, one at a time, mixing well between each.

    Stir in the lemon zest.

    Fold in the self raising flour and milk until just combined.

    Pour into the prepared tin and bake for 40 minutes until a skewer comes out clean.

    Once cool, top with lemon mascarpone icing and finish with a lemon glaze.
