Festive fudgy brownies with whole mince pies baked inside — half the brownie batter in the tray, mince pies arranged on top, then covered with the rest. Makes 2 large trays.

Preheat oven to 160°C. Grease and line 2 large brownie trays.

Melt the butter and dark chocolate together in a large pan. Leave to cool slightly.

In a large bowl, mix together the cocoa powder and plain flour.

In a separate bowl, whisk the eggs and golden caster sugar together. Add the dry ingredients and whisk to combine.

Add the wet chocolate mixture and mix everything together.

Pour half the brownie mixture into the trays. Arrange the mince pies evenly on top.

Cover with the remaining brownie mixture.

Bake for 40–45 minutes until set. Leave to cool completely before cutting.
