A deeply indulgent mocha cake made by melting dark chocolate and butter with coffee, then folding through flour, two sugars and cocoa. Rich, fudgy and intensely flavoured.

Preheat oven to 160°C. Grease and line your cake tin(s).

Melt the dark chocolate and butter together in a large pan over low heat.

Dissolve the instant coffee in cold water, then stir into the pan and warm through.

In a large bowl, mix together both flours, bicarbonate of soda, both sugars and cocoa powder until well combined.

Add the eggs, buttermilk and the melted chocolate mixture. Mix everything together until smooth.

Pour into the prepared tin(s) and bake at 160°C for 1 hour 25 minutes until set.

Make the icing: warm the cream with the caster sugar, then pour over the chopped dark chocolate and stir until smooth.
