Oreo Stuffed Cookies

Giant chewy cookies encasing a whole Oreo thin, loaded with milk chocolate chips and finished with flaky sea salt. Makes around 14 large cookies.

    Cream the butter, light brown sugar and granulated sugar together until light β€” about 3 minutes.

    Add the eggs and vanilla extract and mix to combine.

    Sift the plain flour, bread flour, bicarbonate of soda, baking powder and salt into a bowl. Mix into the wet ingredients.

    Stir in the milk chocolate chips briefly (about 10 seconds).

    Preheat oven to 170Β°C. Take ΒΌ cup portions of dough, flatten slightly, place one Oreo thin in the centre and wrap the dough around it to encase completely. Roll into a ball.

    Place on a lined baking tray, sprinkle with flaky sea salt and bake for 12 minutes until golden at the edges but still soft in the middle.

    Leave to cool on the tray β€” they will firm up as they cool.
