
Peanut Choc Brownies with Ganache

Preheat oven to 170°C. Grease and line a large tin.

Make the peanut layer: mix the peanut butter, granulated sugar and 2 eggs together until combined. Set aside.

Make the brownie: melt the dark chocolate and butter together. Stir in the granulated sugar and vanilla.

Add the 6 eggs one at a time into the chocolate mixture.

Mix together the cocoa powder, cornstarch and salt, then fold into the wet mixture.

Stir in the chocolate chips.

Pour the brownie mixture into the lined tin. Spread the peanut butter mixture on top.

Bake for 30 minutes at 170°C. Leave to cool completely.

Make the ganache: heat the whipping cream until just simmering, pour over the chopped dark chocolate and stir until glossy and smooth.

Pour the ganache over the cooled brownie and leave to set before cutting.
