Pecan & Walnut Pie Bars

A buttery shortbread crust topped with a rich caramel filling of pecans, walnuts and desiccated coconut, finished with milk chocolate. Makes one tray, cut into bars.

    Preheat oven to 170°C. Cream the butter and light brown sugar together for the crust.

    Add the vanilla extract and water, then mix in the plain flour until a dough forms.

    Press into the base and up the sides of a lined tray. Bake for 10 minutes.

    Make the filling: melt the butter, double cream, light brown sugar and vanilla together over low heat.

    Mix in the chopped pecans and walnuts, then the desiccated coconut.

    Scatter half the chocolate chips over the baked crust, then press the filling mixture tightly on top. Scatter remaining chocolate chips over the top.

    Bake for a further 25–30 minutes until set and golden. Leave to cool completely before cutting into bars.
