Vegan Tahini Cookies

Chewy, nutty vegan tahini cookies with dark chocolate chunks — chilled before baking for a perfect texture. Makes 12. Ready in 175°C for 18 minutes.

Mix the coconut oil, tahini, granulated sugar and brown sugar together with a hand mixer until light — about 3 minutes.

Add the plant milk and vanilla extract to the tahini mixture and mix to combine.

In a separate bowl, combine the plain flour, cornflour, salt, baking powder and bicarbonate of soda.

Mix the dry ingredients into the tahini mixture, then stir in the chopped dark chocolate.

Cover the dough with cling film and refrigerate for at least 30 minutes.

Preheat oven to 175°C. Scoop 1/3 cup portions of dough onto a lined baking tray and roll into balls.

Bake for 18 minutes until golden. Leave to cool on the tray — they will firm up as they cool.
