Vegan Tiffin

A rich no-bake vegan tiffin made with plant-based butter, golden syrup, cocoa, crushed digestives and glace cherries, topped with melted dark chocolate. Makes 48 portions from a 1kg tin.

👩‍🍳 Method

    Heat the plant-based butter, golden syrup and caster sugar in a pan until the sugar dissolves.

    Mix in the cocoa powder and salt into the butter mixture until smooth.

    Fold in the crushed digestives and glace cherries. Mix until well coated.

    Press the mixture firmly into a 1kg tin.

  5. 5

    Melt the dark chocolate with a little plant-based butter and pour over the tiffin to cover.

    Refrigerate until set, then cut into 48 portions.
