Velvet Brownies

Dramatic red velvet brownies with a swirled cream cheese layer on top — rich cocoa brownie batter layered with a vanilla cream cheese mixture and swirled with chocolate. Makes one large tray.

👩‍🍳 Method

    Preheat oven to 175°C. Grease and line a large brownie tray.

    Melt the butter in a bain-marie with the caster sugar. Add vanilla, cocoa powder, red gel colouring and vinegar. Mix well.

    Add the eggs, flour and salt. Mix to a smooth batter.

    Make the cream cheese layer: mix the cream cheese, caster sugar, eggs and vanilla together until smooth.

    Pour the brownie batter into the prepared tray. Dollop the cream cheese mixture on top.

    Use a skewer or knife to swirl the two mixtures together.

    Bake for 40 minutes until set. Cool completely before cutting.
