The classic Victoria sponge — light, buttery and reliable. Sandwiched with jam and buttercream. Simple, perfect, timeless.

👩‍🍳 Method

    Preheat oven to 170°C. Grease and line two sandwich tins.

    Cream the butter and caster sugar together until very light and fluffy. Mix in the vanilla.

    Add the eggs one at a time, mixing well between each addition.

    Sieve the self raising flour and fold in gently.

    Divide between the two tins and bake for 20 minutes until golden and springy.

    Leave to cool completely. Sandwich with jam and buttercream.
